Pancakes 101

Very Best Pancakes

2 eggs
5 tablespoons butter
1 cup milk
1 1/4 cups all purpose four
1 tablespoon sugar
1 tablespoon plus 1 teaspoon baking powder (4 tsp.)
3/4 teaspoon salt

Break both eggs into a heat-proof bowl. Add sugar and wisk until well mixed.



In another bowl mix flour baking powder and salt.


Place butter and milk in small sauce pan.
Heat on medium flame until butter is melted.


Now SLOWLY pour the hot butter/milk mixture into the egg mixture.
Keep stirring ALL the time until all is incorporated.
If you don't stir while pouring you will end up with scrambled eggs. 
You want to heat the eggs up gradually so the don't cook.



Now dump the flour mixture in all at once and stir just until blended.


I use scoops to put the batter onto the hot griddle. 
The larger for regular sized pancakes, the smaller for silver dollar pancakes.


Now cook on a hot griddle, until little bubbles form on top.


Flip and cook until golden on the other side.


Serve with butter and syrup.
